Sweet potato breakfast bowl

 



What’s for breakfast?!

Eggs, sausage, spinach, sweet potatoes and avocado. 

I try to add veggies to my main three meals everyday. This breakfast recipe is nice and simple. It’s delicious and gets me a good variety of nutrients to start my day and is a great meal post workout. 

Why its good

SPINACH - boosts hydration, rich in multiple vitamins and minerals, eye health, skin + hair health, bone health

Sweet potatoes are a complex carb. Don't know what a complex carb is?? Well I'm about to tell you ๐Ÿ˜ƒ I love educating people on food! A complex carb takes longer to digest therefore it is a more stable source of energy for our bodies. They have a longer chain of sugar molecules so when they breakdown they give us energy longer than a simple carb which still does give us energy, but it is very short lived and can be accompanied by a spike of insulin to the body causing a sugar rush or sugar high, which can lead to confusion, irritability and fatigue in some cases. This is just a small amount of info - stay tuned for a full blog post on simple carbs vs complex carbs. Okay, back to why sweet potatoes are good for you...

SWEET POTATOES - complex carb, VERY high in Vitamin A (eye health, great for your skin, promotes healthy cell growth and reproduction) immune support and antioxidants - to name a few

AVOCADO - great source of potassium, high in fiber and packed full of monounsaturated fats (good fat and also another blog post ๐Ÿ˜‚) can enhance the absorption of other nutrients

EGGS -  they are a complete protein - what is a complete protein? You guessed it, I'm going to tell you. A complete protein is a food source that contains an adequate amount of all 9 essential amino acids necessary in the human diet. Okay now back to it...
complete protein, help lower odds of a stroke, offer may cholesterol and triglyceride benefits making them very heart healthy

SAUSAGE - you're right sausage isn't always the best choice, but it tastes delicious and if eaten in moderation can be a great and flavorful addition to your daily food consumption. Make sure you choose wisely, because they definitely aren't all created equally. I choose to get a leaner version and go with turkey sausage.

WHAT YOU NEED

EGGS
SWEET POTATO
TURKEY SAUSAGE
SPINACH (kale or arugula will work)
AVOCADO
SEASONING OF LIKING (I use Everything but the Bagel)

Brown the sausage, scramble the eggs (or fry) and add some or all sausage (depending on how many you are cooking for.)

I cut the sweet potatoes into thinner and smaller cubes so they cook faster and sautรฉ them in olive oil, or oil of choice. 

Put it all together in a bowl with some spinach and top with some Everything but the Bagel seasoning and breakfast is served! 

*You can also add the spinach to the sausage while cooking if you prefer cooked spinach. Or you can chop the spinach and add it for those picky eaters to sneak some greens in without noticing.
